Mango Soup...


I have a mango tree in my yard that is more than 60 years old. Every season, I get over 300 mangoes from this tree. If they are green and yellow (partly ripe) the fruit has a hard texture and tastes like an apple. If the mangoes are red orange in color they are fully ripened and the taste is like honey. Very, very sweet.

Last month, we gave away more than half the fruit that came off the tree.

I was slicing pieces and putting them in a blender to make smoothies. But the truth is you can only eat so much before getting tired of mangoes.

My wife peeled and sliced about 30, put them in plastic bags and stuck them in the freezer. It's too much work and I told her to put whole mangoes in the freezer too!

What can you do with mango puree?
Lots of things. I've had mango flavored pancakes and to my surprise, mango soup.

By request, I'm going to try mango and oatmeal next. Probably this weekend.
