Nice to see our President GMA on the government channel with some of the members of her cabinet, declaring us free from H5N1 Avian flu strain. Their discussion is a welcome relief to all of us beleaguered by the worldwide report of Bird flu spread.

For those of you with cable TV, National Geographic Channel is airing a documentary special report about this subject on the 16th of November in Asia coverage. A must see for a much needed information regarding the Pandemic scare.

KIMCHI... South Korea vs. China

We all know that in sports competitions like the quadrennial Olympics and the biennial Asian Games, these two countries battle it out for supremacy on "who's who" in the Asian region. These two protagonist are entangled once more with a new kind of conflicting interest cause by a mere neglect on methods of food preservation. This is about the side dish pickle food famous in South Korea, "KIMCHI".

Kimchi is a spicy Korean staple food, made out of a pickling process on fermented ingredients compose of radish, cabbage with garlic,ginger and hot pepper.

Now comes the trouble, the famous side dish has a ban imposed on its importation from China mainly because of the round worm parasite's egg found. Possible sources? Human excrement's believed to have been used as fertilizers in growing cabbage, one of the main ingredients of Kimchi. On various occasions some say that the product has a high level of lead contamination unsuitable for human health. On the other hand, theory that excrement's from cats and dogs raised in the farmland could have cause the horrid situation.

The banning of the importation of this spicy pickled dish has triggered another retaliatory investigation, this time on the Chinese side, in which cosmetics imported from South Korea were put on hold in the market for a test because Chinese authorities claim that products were sub standard in quality.

News media from Asia were focus at the most towards the said" Parasite eggs found in Kimchi". Thus, high percentage of the imports bound for Japan have to pass strict standard measures for food safety.

Well, Best thing they can do is to learn the process of fermentation and do it "home made style". Much to their concern for health safety and ease out the anxieties of the Kimchi war.

Every Grave Has A Story To Tell...

It's my second month here at AFF, and it coincides with the same day a heritage practice here in the Philippines is being observe by million of Filipinos. Remembering the departed souls of our love ones and relatives called "ALL SAINTS DAY".

I went to St. John Memorial(cemetery), for my usual yearly duty of cleaning up the surroundings within the grave of my late brothers and of course that of my dearest Father, who expired twenty years ago due to cardiac failure at a local VA hospital.

In about a year time, tall grasses and wild vines were all over the place. This clings from both side of the niches and the iron grill, a fence made that separated it from the other tombs of townmates buried upon the nearly congested town graveyard.

With two candles in hand, lighting it on while uttering a silent prayer to them. A feeling of loneliness engulf me and it seems hard to forget all those happy moments we have shared together in good and bad times. Mostly worthy were the once, when we were just , growing up together in a place called home.

The division of labor inside the house was an example, being the strongest amongst them, I was assign at the heavier work loads. Like the cleaning of the pigpen, feeding of the chickens, the digging of canals and an errand boy for the poultry and live stock feeds supply for our backyard livelihood program me and my Grandma was tending at that time.

My brothers were busy with their home work from school which to me, were the usual alibis they told my Mom to skipped their task of working on the daily household chores.

Right after supper comes bedtime and we would have the usual pillow fight and our way to induce sleepiness was the word game or the local riddles.

My eldest brother was a word puzzle whiz, a natural bookworm and a studious boy, but he was of a small physique frame, frail and lanky because of poor appetite. So all I can offer him in hand comes in the chores, I would helped him and I'm being granted in return with his sharing of word knowledge and vocabulary skills. He was at the sixth grade and I was in grade three level.

So with his untimely death of a heart illness, I guess my being active and that hard work really ends beneficial on my part. It gives me the endurance I needed in surpassing the test of time till now at present.

First day of November, my deep sorrows in my heart, losing dear members of the family worthy of remembering as life goes on.

"May their soul rest in peace with the Lord".

Never had the chance to express more of my devotions and my fondness of her. She acts as one of my welcoming friends at the blogsite. I heed to her advise and hoping I did'nt fall short to her likings and standards.

Anyway since she has nothing to grudge on about my presence, Surely I would endear her with whats left in me, An offering of the simplest of my well being and that genuine truth of what I have to stand for.

Far from getting distracted by revealing her identity, You know much who you are and, What you are to me. A living soul of whom I'm ready to fall in love with, No matter what distance sets us a part. With these vague expressions hanging on left unanswered, thanks! I'm still awaiting on my chance of having you near me.

What can I asked for? Just the thought of having you near here at my side brings candid feelings on me! Who else? No one else but you!

Potential Danger... Pandemic...

After the killer quake comes a new kind of scare, the Avian Flu commonly known as the bird flu virus.

European countries now on panic with the incoming flights in thousands of migratory birds from Asia as winter season sets near. A latest case of positive identification of the H5N1 bird flu strain in Romania and Turkey plus the inflicted parrot in UK, drew much attention on neighboring borders including, Hungary, Germany Greece, and its new destination target, regional parts of Africa.

Birds have to be quarantine and be subjected for culling in thousand numbers to contain the strain from spreading out to poultry and all domesticated fowls and pet birds. The coming weeks opens the season for migration of birds from Central Asia. Poultry have to be put on their respective stalls to avoid physical contact with the coming of the potential carriers of avian influenza strain.

Pharmaceutical laboratories in quick response, shift on high scale production of anti-flu vaccine and drug medications in anticipation of a pandemic. This takes on once the mutation of the deadly strain contagiously leap on, from birds to humans, and then a human to human transfer.

Health Ministers and official urges member state of the European Union"to effectively coordinate action against the outbreak of Avian flu".

The top priority agenda in the emergency meeting of the European Union Foreign Ministers in Luxembourg is to act swiftly on this crisis. The Ministers appeal for calm and assure them that every effort is being done to ensure public health safety.

Back here in Southeast Asia, We have to be in formed and be given attention by the WHO (World Health Organization), this is to have a close case to case study and monitoring of the birds movement within the region for we are the potential breeding ground of this virus strain. A possible pandemic once the mutation reach up to its dangerous affliction level, is on its leap bound stage.

Our own natural savior might be this factor of having a tropical climate, let's hope that our warm temperature slows down the mutation process of the virus, compared to the coming cold winters in Europe.

Wacky characters on gloomy weathers and chicken roast for Sunday feast at noon.

Sirens of car would wake a on a sweet lullabies...

Love birds on a cage so flirtatious, hear them chirp and cry...

Rhythmic droplets of rain by the roof goes stronger...

My neighbours laugh and giggle as they monger...

Rations of Sampaguita lei, flowers blossomly white...

Makes my Sunday Morning...beautiful and bright...

Here's a good Grandma's delightful recipe for everyone.

Ingredients:

A kilo of Beef cut into large cubes

1 clove of minced garlic

3 minced white onions

1 cup of tomato sauce

2 large red bell pepper, sliced

3 tablespoon of Liver 'pate(spread)

2 cups of coconut milk

1 teaspoon of citrus extract or 1 cup pineapple juice(either will do)

1/2 cup of soy sauce

3 leaf of bay leaves

butter or margarine

1 cup of cooking oil for frying

1 cube of Knorr beef broth

2potatoes and 2 carrots cut in big dice

few bits of salt and black pepper

1 red hot chilipepper cut in half

Procedures:

Marinate the beef with the citrus extract or pine apple juice, 1/2 a cup soy sauce and black pepper, mashed the meat to absorb the substance.

Pre-heat the big sauce pan large enough for the ingredients. Half-fried the potatoes and carrots on a small amount of cooking oil then put aside.

Remove the cooking oil, then proceed...

Saute' the garlic in butter or margarine till brown then the minced onions, followed by the tomato sauce and bell pepper, for a couple of minutes.

Put the marinated beef, then cover and let simmer for about 20 minutes for the meat to absorb the flavor mixed,

Then put the coconut milk, liver spread, bay leaves, Knorr cubes beef broth(crushed),and red hot chili pepper.

Let the meat boil in the saucepan on a low heat till tender and see to it that the coco milk is cooked up to its oily stage...stir and evenly spread the sauce...

Put the potatoes and carrots till done and when the beef is tender enough...

Serve it hot with plain bread or garlic fried rice.

It also goes well with some shot of Tequila, Dry Gin tonic, or Rum!!!

A kiss is a customary practice of expressing your affections towards others. A show of love and longing...

Here's a question on which one you prefer to have?

"A Fawewell Kiss or A Welcome One"

For me, I would rather have a farewell kiss of luck for a new designated assignment, a new world experience, a kiss for a headstart towards a bright future and what it has to offer.

Rather than that of a heartbreaking kiss for a fallen one inside a body bag. Even if so,It is a heroes welcome but in return, A sad farewell and grief for leaving behind onwards to your afterlife.
